Brill cheese was first made by Neelix in 2371, as a kindly act of #CheeseSolidarity to Ensign Ashmore who really fancied a mac & cheese.
A creamy pale green cheese, Brill was made from grakel milk obtained from the planet Napinne in the Delta Quadrant.
The Star Trek Voyager records describe how the microbial community used to culture the grakel milk, infected the ship’s bio-neural gel packs causing quite a fuss. This video shows the Voyagers quarantine protocol in action, and the famous command being uttered:
