Read any of Heather Paxon’s published work (available in PDF format here via @MITNews Anthropology) and you’ll be hooked. I’m late to this camp, however enthusiastic to become a groupie. Exploring the heated disagreements of pasteurisation, craft responses to regulation, the creation of a tradition of innovation, etc… cheese gold. Paxsons contribution to The Surprisingly Colorful History Of Milk via @OnPointRadio is well worth the listen too.
